The Ratatoullie, or Ratatouille Niçoise (from Nice) is a dish which we will discuss in our section of cooking.
It was originally conceived as a poor man’s dish, peasants, and the Board may consist of vegetables, such as eggplant, tomatoes, zucchini, peppers, garlic and onion, and sometimes of Provencal herbs or basil.
Ingredients:
- 2 Eggplants
- 2 Zucchini
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 White Onions
- 500 gr. of Tomatoes (auburn)
- 2 or 3 cloves of garlic
- Salt and Pepper to taste
- 2 sprigs of thyme
- 2 bay leaves
- 2 leaves of basil
- 6 tablespoons oil
After you have washed and cut vegetables as you wish, put 3 tablespoons of olive oil in the pan to heat, when the oil is hot, we add the onions and let simmer, once we add the dried peppers.
Meanwhile we blanch and peel the tomatoes, cut them, and when the peppers have softened add them on the fire along with the thyme and laurel alglio chopped and a pinch of salt.
In another pan and pour the remaining oil for about ten minutes we send in cooking the courgettes and aubergines until they are soft not untrimmed.
Gather the vegetables in a single pot mixing them gently, add salt and pepper and serve garnished with basil leaves.
La Ratatoullie
La Ratatoullie, o Ratatoullie Niçoise (da Nizza) è il piatto del quale parleremo nella nostra rubrica culinaria.
Originariamente era concepita, come piatto povero, dei contadini, e la sua composizione prevede verdure quali: melanzane, pomodori, zucchine, peperoni, aglio e cipolla, e talvolta delle erbe provenzali o il basilico.
Ingredienti:
- 2 Melanzane
- 2 Zucchine
- 1 Peperone Rosso
- 1 Peperone Verde
- 2 Cipolle Bianche
- 500 gr. di Pomodori (ramati)
- 2 o 3 spicchi di Aglio
- Sale e Pepe a piacere
- 2 rametti di Timo
- 2 foglie di Alloro
- 2 foglie di Basilico
- 6 cucchiai di Olio
Dopo aver lavato e tagliato come più vi aggrada le verdure, mettete 3 cucchiai d’olio a scaldare in padella, quando l’olio è caldo ci aggiungiamo le cipolle e le facciamo passire, una volta appassite aggiungiamo i peperoni.
Nel frattempo scottiamo e peliamo i pomodori, li tagliamo, e quando i peperoni si sono ammorbiditi li aggiungiamo sul fuoco insieme al timo all’alloro e l’alglio tritato ed un pizzico di sale.
In un altra padella versiamo l’olio restante e per una decina di minuti mandiamo in cottura le zucchine e le melanzane, fino a che non siano morbide a non sfatte.
Riunite le verdure in una pentola unica mischiandole con delicatezza, aggiungete sale e pepe, servite decorando con le foglie di basilico.
