The Ice Cream Today
Nowadays it is normal to go to the bar to buy a packaged ice cream or go to the nearest ice cream cone to eat a craft, but for a long time it did not.
One of the first to produce gelatp for a real business Pepinoi was the ice cream shop in 1884 in Turin.
Among the various schools that have distinguished themselves over time in the manufacture of ice cream is worth mention that the Veneto, in particular that of the Val di Zoldo, Cadore and Belluno province, which has been able to be appreciated all over the world.
Gelato
The main ingredient of ice cream is milk, followed by sugar and cream (respectively about 60% of the first, between 14 and 24% the second and between 5 and 20 & third), sometimes is also added a quantity of skimmed milk powder to ensure an adequate intake of protein and milk solids, which are vital for the maintenance of the structure: the lactose present in about 50% is used to absorb the free water and proteins to give shape and stability .
In a good homemade ice cream there must be a proper balance of the solid ingredients, such as: the fat cow, sometimes combined with the egg yolk, sugar and milk solids not fat.
There are other solid ingredients, such as fat-water emulsion stabilizers, thickeners bond for water, and solids in recipes specific products such as cocoa or dried fruit.
The base mix for the tastes must be subjected to pasteurization in order to make hygienically safe and to obtain a better bond between the solid components and water, resulting in a more stable structure and a more creamy texture in the final product.
Artisan gelato fruit water, or sherbet, milk is absent; its ingredients are in fact, the fruit (between 25 and 60%) and added sugars (about 25%).
Since, the less creamy than normal ice cream sorbet, gelato makers add some milk too so that the product is creamier and can be appreciated by a wider range of consumers.
The preparation of ice cream done by the use of special machines that enable the management of the various phases.
Italy is the only country in the world where gelato covers 55% of the market, thanks to extensive coverage, the history, the tradition, the habit of walking ice cream and the professionalism of the staff.
The Ice Cream Business
It ‘an ice cream that is produced several months before being consumed, and are used in its production preparations and raw materials such as powdered milk and fruit juice concentrates, and additives such as coloring agents, emulsifiers, stabilizers and flavorings.
In the production of these ice cream there is also the introduction of air, during the step of chilling, in fact they are often called gealati blown.
Differences between the ice cream and the industrial
- In the artisan gelato, the product is usually fresh and produced by the same dealer.
- In the artisan gelato is present in a minor amount of fat (6-10% in handcrafted 8-12% in industry).
- In the artisan gelato is present in a smaller amount of air (max 35% in the craft, min 70% in the industrial ones).
Il Gelato di Oggi
Al giorno doggi è cosa normale andare al bar a comprare un gelato confezionato o andare alla gelateria più vicina per mangiare un cono artigianale, ma per molto tempo non fu così.
Uno dei primi a produrre gelatp per una vera e propria attività commerciale fu la gelateria Pepinoi nel 1884, a Torino.
Tra le varie scuole che si sono distinte nel tempo nella fabbricazione del gelato merita senz’altro citazione quella veneta, in particolare quella della Val di Zoldo, del Cadore e della provincia di Belluno, che ha saputo farsi apprezzare in tutto il mondo.
Il Gelato Artigianale
L’ingrediente principale del gelato artigianale è il latte, seguito dallo zucchero e dalla panna (rispettivamente circa il 60% del primo, tra il 14 e 24% il secondo e tra il 5 e il 20& il terzo), alcune volte viene aggiunta anche una quantità di latte magro in polvere per garantire un adeguato apporto di proteine e solidi del latte, di vitale importanza per il mantenimento della struttura: il lattosio presente in circa 50% serve per assorbire l’acqua libera mentre le proteine per dare corpo e stabilità.
In un buon gelato artigianale ci deve essere un corretto bilanciamento degli ingredienti solidi, quali: il grasso vaccino, unito talvolta con il tuorlo d’uovo, gli zuccheri ed i solidi magri del latte.
Esistono poi altri ingredienti solidi, come gli stabilizzanti dell’emulsione acqua-grasso, gli addensanti di legame per l’acqua, e solidi presenti nelle ricette specifiche come i prodotti derivati dal cacao o la frutta secca.
La miscela base per i gusti deve essere sottoposta a pastorizzazione al fine di renderla igienicamente sicura e di ottenere un miglior legame tra componenti solidi e acqua, risultante in una struttura più stabile e una tessitura più cremosa nel prodotto finale.
Nel gelato artigianale di frutta all’acqua, o sorbetto, il latte è assente; i suoi ingredienti sono infatti, la frutta ( tra il 25 e il 60%) e gli zuccheri aggiunti ( circa un 25%).
Essendo, il sorbetto meno cremoso del normale gelato, alcuni gelatieri aggiungono ugualmente del latte affinchè il prodotto sia più cremoso e possa essere apprezzato da una più vasta gamma di consumatori.
La preparazione del gelato avviene mediante l’uso di apposite macchine che consentono la gestione delle varie fasi.
L’Italia è l’unica nazione al mondo dove il gelato artigianale copre il 55% del mercato, grazie alla copertura capillare, la storia, la tradizione, l’abitudine del gelato da passeggio e la professionalità degli addetti.
Il Gelato Industriale
E’ un gelato che viene prodotti diversi mesi prima di essere consumato, e nella sua produzione sono impiegati dei preparati e delle materie prime come latte in polvere e succhi di frutta concentrati, e di additivi come coloranti, emulsionanti, stabilizzanti ed aromi.
Nella produzione di questi gelati vi è anche l’introduzione dell’aria, durante la fase di gelatura, infatti spesso vengono chiamati gealati soffiati.
Differenze tra il gelato artigianale e quello industriale
- Nel Gelato artigianale il prodotto è solitamente fresco e prodotto dallo stesso rivenditore.
- Nel Gelato artigianale è presente una minor quantità di grassi (6-10% in quello prodotto artigianalmente 8-12% in quello industriale).
- Nel Gelato artigianale è presente una minor quantità d’aria (max 35% negli artigianali, min 70% in quelli industriali).
